Grilled Banana

Still using the same banana as what I used in the bread I made the other day, I made grilled banana too
Another big hit among Indonesians :P


Sweet juicy pisang raja...


Grill peeled ripe bananas over low fire on both sides for approx 3 minutes for each side
Put them in a clean plastic bag and using a flat heavy object press them lightly til flatten (I used chopping board)
Take them out from the plastic bag, arrange on serving tray, lather some margarine on them and put topping as desired
I & DH still preferred choco rice+cheese
Many Indonesians (Javanese mostly) do with a combo of pineapple jam+icing sugar
I separated those two since I personally said it's just too much hehe....

Another sinful and yummy treat - especially if you have a sweet tooth! :)

Crepes With Custard Filling

Bought this crepe premix at Daiso:

Tried half the package, was pretty satisified with the result but I had a strong feeling the amount of butter suggested is a mistake printed - it turned out to be super oily cos of the butter
Had to pat dry with kitchen towel before fill them up with the custard

The custard filling made from the same recipe as fruit tarts I made sometime back

Drizzled with raspberry jam put in microwave for 30seconds...


And this is drizzled with chocolate condensed milk I ever talked about here


What you need:

1/2 package of crepe premix (100g)
1 eggs
150ml fresh milk
1 cup melted butter (this resulted in super oily and buttery crepes - I will definitely reduce this when I make the remaining premix to 1/4cup instead)

Break egg into large mixing bowl - whisk well
Add milk and mix thoroughly
Add crepe mix and stir well til smooth texture is achieved
Add melted butter abd stir til evenly distributed
Coat preheated frying pan with a little butter and scoop 1 ladle of batter onto pan
Tilt pan to spread batter evenly. Cook over low heat til underside of the crepe is light brown
Turn crepe and cook til light brown

Such a sinful yummilicious treat!
Next time I feel like adding some fruits into the custard filling such as strawberry or peach

This is actually my first time making crepes
Gonna make the remaining premix and then after that I will make crepes from the scratch hehe...

Soft Delicious Buns & Another Award

Another yummy bread - recipe from MamaFaMi's blog, as recommended for herself, therefore I gave a try a few days ago
Wow! These buns were so soft and delicious, much better than the soft butter buns I made the other day!

I guess I have overbaked these buns a little, but it did nothing to the goodness of the buns
They were filled with chocolate, chocolate+cheese and pineapple jam

But look at the texture inside! Soft and fluffy - so yummy!

Besides those 2 loafs, I made these 8 little buns filled with banana+chocolate and also banana+cheese
DH managed to find king banana at one of nearby fruit stall (we Indonesians call it 'pisang raja') - this type of banana is so perfect to use as bread filling - just steam for awhile, peel the skin and half them before putting in the dough - so sweet and juicy
Not easy to find in Singapore though...
Totally forgotten to take picture of it hehe...

After my big bite *grin*

No chance to take picture of the one with banana+cheese filling - gone in seconds! :P

What you need:
( I only made half of the recipe below)

200ml water
2 eggs
90g castor sugar
1/2 tsp salt
1 tbsp dough softener
500g bread flour
4 tbsps milk powder
1 tbsp bread improver
11g instant dried yeast
3 tbsps margarine

Filling & topping:
some dark chocolate
some grated cheese
some chocolate rice
steamed pisang raja - halved
some pineapple jam

Using bread maker:
Pour water, egg, sugar, salt and dough softener into the bread maker pan. Top it with flour, milk powder, bread improver and yeast
Set the breadmaker to Dough function
Once the dough is just combined, add in margarine. Leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including prooving
Measure dough to 25g each. Form each dough into a ball and rest for 15 minutes
Flatten the dough and place the filling in the middle and wrap the filling with the dough. Arrange on a baking tray as preferred
Cover the buns and let it rise until double in size (mine is around 1hour)
Brush the buns with some egg wash (1 beaten egg + 1tbsp fresh milk) and sprinkle with some topping you like (mine is grated cheese and chocolate rice)
Bake in a pre-heated oven at 180 C for approx 20 minutes or until golden brown
Once out of the oven, brush with a bit of margarine. Place on a wire rack to cool. Keep in an airtight container

Deep Fried Tilapia & Sayur Lodeh

A great combo that requires strong determination to stop adding rice to your plate :P

Deep fried tilapia with flour coating - so crispy on the outside and soft inside
Saw this at Ricke's blog - nice treat when you don't really count calories hehe....


What you need:
(with a little modification)

1 black tilapia, clean and cut into 3
juice of 1 large lime

Blend together:
4 cloves of garlic
1cm yellow ginger
1cm blue ginger
salt, pepper

For coating:
50g rice flour
2 tbsp plain flour
2 cloves of garlic - crush till smooth
1 tsp coriander seeds - crush til smooth
salt
1/2 tsp baking powder (I added)
1 beaten egg (I added)
Mix all ingredients above with water - keep stirring til it forms a rather thick liquid

enough vegetable oil for frying

Coat the fish with juice of large lime - set aside for approx 15mins
Wash til clean and tap dry with kitchen tissue
Coat with the blended ingredients - set aside for around 1 hour in the fridge ( I did this in the morning and keep in the fridge til late afternoon)
Just before frying, dip the coated fish with the flour mixture, deep dry til crisp and golden brown

Best eaten with chilli dip: cut bird's eye chilli (either red / green) + cut shallots + sweet soya sauce (kecap manis)

That day we ate the fish with another dish, we Indonesians call it, Sayur Lodeh
It's a vegetable dish cooked in coconut milk


What you need:

1 clove of garlic - cut thinly
5 shallots - cut thinly
2 big red chillies - throw away the seeds
100ml coconut milk mixed with some water (I used Kara coconut milk) - I try not to cook with thick coconut milk hence the small amount of coconut milk used
1/2 block palm sugar,
1 tsp fried prawn paste (belachan)
salt, a little sugar
1 big eggplant - diced
100g bamboo shoot, cut thinly
approx 10pcs of long beans, cut
1 handful of petai - halved (I couldn't get petai that day so mine no petai hiks...)
water

Boil a pot of water together with garlic, shallots and red chillies
Add in petai and bambooshoot, followed by palm sugar, prawn paste, salt, sugar and coconut milk
Bring to boil again
Add in long beans and eggplant, stir well and adjust taste accordingly, check the softness of all vegetables
Once the vegetables cooked and the desired taste achieved, off heat

Great to eat this vegetable dish with sweet soya sauce (kecap manis) and prawn paste chilli sauce (sambal belachan)

Those want to try, please cook more rice :)

Hainanese Chicken Rice

Great pre-mixed set for a lazy mummy on a lazy weekend :P


The good thing is it doesn't forget the chicken, it comes with the seasonings and sauces for both chicken and rice, so I didn't have to do anything else at all, just get ready with the chicken and the rice, the spring onion, chilli sauce, dark sauce and blended ginger, and cucumber - that's all :)
I didn't have dark sauce, ginger and cucumber so I just skipped them without any regret :P

Boil a pot of water and add in 1 whole chicken (I cut into parts) - make sure it submerged, add in the chicken seasonings and simmer for 30mins
Pour the sauce over the cooked chicken just before eating
Really yummy tender chicken!


To prepare the rice, use the water from the chicken and add in the seasonings - put all into rice cooker and let cook - that's it


Use the remaining chicken stock as the soup - you may adjust the taste accordingly by adding a liitle salt and pepper - enjoy! :)

Chocolate & Strawberry Steamed Cake (Indonesian Bolu Kukus)

Very popular cake among Indonesians, I have been always curious in making this cake but always forgotten about it
I have 2 different recipes and since I happened to have extra strawberry milk in the fridge a few days ago, so I decided to give a try - the one using milk

Usually this cake uses special mould, something like muffin mould made of aluminium with holes around it and to layer parchment paper in it before pouring the batter
I have them but too lazy to do the paper so opted for muffin paper instead
Ended up I had these giant short fat cakes hehe....


Another thing was, I put them in the steamer too close to each other they can't bloom to the max - haizzz... I should have put them a little more separated and I could have prettier cakes :(


But really, there's no doubt, this cake tasted yummy, soft and fluffy - my kind of cake :)



Recipe adapted from NCC Indonesia
(I made half recipe and modified a little)

What you need:

225g sugar
250g plain flour
1/2 tsp double action baking powder
2 eggs
150ml strawberry milk (original recipe mentioned water / coconut milk as other options)
1/2 tbsp ovalette
1/2 tsp vanilla essence (original recipe used banana essence)
1 tbsp strawberry paste & 1 tbsp chocolate emulco

Sieve plain flour and baking powder together, set aside
Beat sugar, eggs and ovalette til thick and creamy
In low speed, gradually add in flour+baking powder mixture, alternate with milk - mix well
Add in vanilla essence, mix well
Divide batter into 2, one to add strawberry paste, and the other to add in chocolate emulco
Pour strawberry batter to the mould til half, top up with chocolate batter til almost full
Preheat steamer, put them in it and steam for 15 minutes (please arrange them with quite a distance approx 5cm from each other to allow them to bloom to the maximum)

I will try the other recipe next time, no milk used, but 7-up instead
My mum said the latter has softer texture and tastes a little better
And of course, the next time I make again, I will use the correct mould and do the correct steaming method *grin*

Mango Yoghurt Ice Cream

Weather has been so hot lately - thought of trying to make ice cream
Since I have never made one before, a simple and easy recipe was the one I looked for, especially knowing I don't own an ice cream maker

Mango is in season now, Thai honey mangoes is everywhere at a cheap price
I have 2 giant ones and apparently also 2 not so giant Thai rainbow mangoes

Found the recipe at Small Small Baker, this easy to make ice cream is really delicious!
















What you need:

500g fresh mangoes - I used 1 Thai honey and 1 Thai rainbow mangoes (original recipe = 300g, I added another 200g which I pulsed in a blender to form tiny chopped mangoes)
50g sugar (original recipe = 100g but my mangoes were so sweet that I had to reduce the sugar by half)
125g mango flavoured yoghurt (original recipe = 100g)
200g non dairy whipping cream
(original recipe used 1 tsp mango essence but I didn't use)

Blend 300g of the mangoes with sugar til it becomes puree
Mix in the tiny chopped mangoes, followed by yoghurt
Beat whipping cream until stiff and fold into the mango mixture til very well incorporated
Pour into a container and freeze overnight until it's firm
