Dalgona Coffee

I know this blog is dying, if not dead haha.. but I decided to start again, cos to me this blog is the most convenient reference
It's my recipe library and will remain so, hence start adding the collection from now on
Not much of a story telling like how I used to do though, just one recipe at a time, and of course with the pictures :)




Dalgona coffee
A nice twist of drinking coffee :)

What you need:

2 tbsp instant coffee powder
2 tbsp brown sugar
2 tbsp hot water
200ml cold milk

Method:

  1. Mix in coffee powder, brown sugar and hot water in a rather tall container. Whisk until soft peak, using electric mixer or hand whisk (they say 400 times of whisking by hand, but of course I chose hand mixer LOL)
  2. Pour milk into a serving cup
  3. Scoop the coffee mixture and place gently over the milk. Serve immediately

Easy Avocado Banana Coffee Pudding

A month hiatus after a couple of weeks rough thunderstorm in my life, I guess it's time for me to live
It's gonna be different from now on, and nobody say it's going to be easy
There are still more days of sorrow than joy and more nights of tears than peaceful sleep
But I have to gather my strength and learn to live with it, one day at a time
 
 
Okay, let's start with this
Still not in the mood for something complicated so here's one easy delicious dessert, not to forget considerably healthy


 
 
What you need:
 
1 ripe avocado, pitted and peeled and cut into chunks
2 medium (or 1 extra large) over ripe banana, peeled and cut into chunks
25g packed light brown sugar
60ml fresh milk
1 tsp instant espresso powder
1 tsp vanilla extract
a pinch of salt
1 tbsp agar agar powder
 
 
Method:
  1. Mix milk, espresso powder, brown sugar, vanilla extract, salt and agar agar powder in a mug and stir well til all dissolved
  2. Using Bosch MaxoMixx Hand Blender's blender attachment add in avocado, banana, and coffee mixture and blend til smooth (I used speed 2)
  3. Transfer to a small pot and bring to boil, stir continuously
  4. Transfer to ramekins and chill in the fridge




I kept them in the fridge overnight for maximum result which a good decision
I enjoyed this soft pudding so much. Try it and hope you enjoy it as much as I do :)

Cappucino Cheese Jelly MooncakeS

This is the first time I made jelly mooncakes
It's easy and since I love coffee and cheese, I definitely think this is one yummy dessert :)

One hiccup, I forgot that the mould is the regular mooncake size, not those mini sizeI usually use. I prepared the filling using mini muffin moulds!
So, I ended up stacked 2 pieces of filling together, hence the hexagon shape hahahah...
Luckily it's just for my own consumption LOL



 
 
 
For filling:
 
What you need:
 
3 1/2 tbsp water
2/3 cup fresh milk
50g sugar
1 tsp agar-agar-powder
50g cream cheese, beat with mixer to soften
 
Method:
  1. Bring water, milk, sugar and agar powder to the boil in a pot
  2. Add softened cream cheese and whisk continuously to prevent lumps from forming
  3. Turn off heat and pour into muffin pans
  4. Leave to cool until set, then chill in the fridge
For skin:

What you need:

1 3/4 cups water
70g sugar
2 1/2 tsp agar-agar powder
1 1/2 tsp instant coffee ( mixed with 3 1/2 tbsp hot water)

Method:
  1. Bring water, sugar and agar powder in a pot to boil
  2. Turn off heat and add instant coffee mixture
  3. Stir continuously
To assemble:
  1. Rinse the mould with water, let the drops of water stay there (this helps in easier unmoulding)
  2. Pour jelly skin, about 3/4 cm. When it almost sets, place filling on it and immediately pour the remaining jelly skin til the mould is full
  3. Leave to set and chill in the refrigerator. Once chilled, unmould and serve

I love the sensation of coffee and cheese mixed together in my mouth, so yummy!
It's not overly sweet, too. One thing you won't be able to get with any other mooncake LOL
I am thinking to mix in some Kahlua in the coffee jelly, yum yum yum... Next time!
And of course I will remember to use regular size muffin tray for the filling hahaha...

Snowskin Mooncakes 2013

I and my family always love snowskin mooncakes more than the traditional baked ones
This time I made coffee snowskin mooncakes with chocolate oreo filling and pandan snowskin mooncakes with cream cheese filling
While I preferred the pandan cheese, my family chose the coffee chocolate



 
Nice pandan flavour skin went so well with the smooth and creamy cream cheese filling



Aromatic coffee skin with oreo chocolate filling was yummy, too. Look at the oreo bits :)
Abby particularly loved this
I regretted I didn't add Kahlua into the coffee skin :P



Recipe is from HERE, still the same as last year and the year before
Unlike last year when I was quite disappointed with the result, this year it's pretty great
The year before was fine, too. Why it's not successful last year still remains a mystery til now LOL

As for the filling, I saw it from HERE
And I was pleased with the texture and taste, yummy!

For the cream cheese filling, I mixed 250g green bean paste (original recipe salty white tau sar paste) and 125g Philadelphia cream cheese
For the chocolate oreo filling, I mixed 250g white lotus paste, 40g melted dark chocolate (original recipe 30g), 2 tsp cocoa powder and 6 pieces of Oreo cookies, finely crushed


I made another batch of snowskin mooncakes, will post soon :)
