Cappucino Cheese Jelly MooncakeS

This is the first time I made jelly mooncakes
It's easy and since I love coffee and cheese, I definitely think this is one yummy dessert :)

One hiccup, I forgot that the mould is the regular mooncake size, not those mini sizeI usually use. I prepared the filling using mini muffin moulds!
So, I ended up stacked 2 pieces of filling together, hence the hexagon shape hahahah...
Luckily it's just for my own consumption LOL



 
 
 
For filling:
 
What you need:
 
3 1/2 tbsp water
2/3 cup fresh milk
50g sugar
1 tsp agar-agar-powder
50g cream cheese, beat with mixer to soften
 
Method:
  1. Bring water, milk, sugar and agar powder to the boil in a pot
  2. Add softened cream cheese and whisk continuously to prevent lumps from forming
  3. Turn off heat and pour into muffin pans
  4. Leave to cool until set, then chill in the fridge
For skin:

What you need:

1 3/4 cups water
70g sugar
2 1/2 tsp agar-agar powder
1 1/2 tsp instant coffee ( mixed with 3 1/2 tbsp hot water)

Method:
  1. Bring water, sugar and agar powder in a pot to boil
  2. Turn off heat and add instant coffee mixture
  3. Stir continuously
To assemble:
  1. Rinse the mould with water, let the drops of water stay there (this helps in easier unmoulding)
  2. Pour jelly skin, about 3/4 cm. When it almost sets, place filling on it and immediately pour the remaining jelly skin til the mould is full
  3. Leave to set and chill in the refrigerator. Once chilled, unmould and serve

I love the sensation of coffee and cheese mixed together in my mouth, so yummy!
It's not overly sweet, too. One thing you won't be able to get with any other mooncake LOL
I am thinking to mix in some Kahlua in the coffee jelly, yum yum yum... Next time!
And of course I will remember to use regular size muffin tray for the filling hahaha...

Milo Agar Agar - Another Recipe

Made with another recipe this time, from Edith's site

This time I only made the chocolate layer, the first time I made the kids only ate the chocolate layer


 It's just as nice, this dessert is very easy to love anyway (unless if you don't like milo of course  LOL)

What you need:
(I modified a little)

12g agar agar powder (1 packet)
1200ml water
115g sugar
1 1/4 cup milo

Bring everything to a boil over medium fire, stir continuously
Pour to mould using strainer, let cool
Chill in the fridge

Note:
Wet the mould before pouring agar agar so it's easier to take out the agar agar from the mould

Again, the kids enjoyed it so much :)

Milo Agar Agar

This is really yummy - yes, nothing else to comment - finished the whole thing in one day :)
Ian wasn't really fond of this agar agar though... but Abby asked to eat nonstop! :P
And this lonely agar agar shown in the pic below is the last slice I got to take picture of hehe....



















Got the recipe from Melly...what you need (I adjusted according to my taste preference):

Milo layer:
5g agar agar powder
500ml water
5 sachets Milo 3in1
2 tbsp sweet condensed milk

Milk layer:
5g agar agar powder
500ml water
7 tbsp sweet condensed milk

Mix all ingredients for Milo layer, cook in a pot over medium fire - keep stirring til boiling
Pour into agar agar mould - let cool
Meanwhile, cook milk layer ingredients, same as Milo layer, cook in a pot over medium fire - keep stirring til boiling
When Milo layer is already cool but not 100% hardened (you may test by touching it with your fingertips, it shouldn't stick), pour milk layer mixture slowly on top of Milo layer
Let cool and keep in the fridge

Mixed Fruits & Jelly Ice

So refreshing on hot sunny humid days...


What you need:

canned peach
canned lychee
sweetened grass jelly
oranges
red agar2 - prepared accordingly
yellow agar2 - prepared accordingly
2 limes
brown sugar

Cut all ingredients acording to preference and put in a large serving bowl
Add in half of the lychee water and plain water to the desired amount
Add a little brown sugar if not sweet enough
Squeeze lime
Add ice cubes or you may keep the bowl in the fridge for half a day

My fave lychee...


You may change and/or add other fruits such as pears, apples, strawberries, canned longan, etc.
Agar colors are up to individual's preference

So so so very refreshing!!!
