Oaty Peanut Butter Energy Bars

A lot of energy bars sold out there. Snack that gives an impression as a healthier alternative
Well, I read many articles that they are actually not. Most are apparently are loaded with sugar, flavouring, preservatives and many other chemicals that the names I can't pronounce haha..
I am not into this kind of snack but I like to eat them too occasionally
After knowing the facts, I guess it's better to make my own at home whenever the craving sets in
As delicious, eaten with less worry :)
This is one recipe I have tried, and I like it :)


 
 
 
What you need:
 
115g creamy peanut butter
120g raw honey (original recipe was 170g but I found it too sweet)
80g rolled oats
1 tbsp chia seeds (original recipe used mixed seeds, can replace with mixed nuts and/or dried fruits)
 
Method:
  1. Over low heat in a pan, warm up peanut butter. When it's warm, add in honey and remove from heat
  2. Mix both til well incorporated
  3. Add in oats and mix well, followed by the seeds
  4. Transfer into a square tin or pan and press it down to make it evenly spread
  5. Chill in the refrigerate for about an hour and cut into 6 bars
 
Note:
Consume in moderation because peanut butter is high in fat, even though it's mainly the good fats in it haha.. and honey is high in sugar too, even though it's a better choice for sweetener
I usually limit this snack to 1 bar a day. The remaining can be kept well in the fridge

Choco Banana Overnight Oats

It's been awhile since the last time I had overnight oats for my breakfast. At the same time, I wanted something chocolaty. And I had some overripe bananas
Browsing through some overnight oats recipes, and I chose one from Mind Over Munch


After spending a night in the fridge, this yummy breakfast is ready :)
 


Yum yum... A very filling breakfast I didn't touch anything to munch til about 2.30pm when I had my late lunch :)
 


What you need:

1/2 cup oats
1/2 cup light coconut milk (I used homemade almond milk)
1/2 banana, mashed (I used 1 medium size banana)
3 tbsp Greek yogurt (I used light)
1 tbsp cocoa powder
1 tbsp unsweetened shredded coconut (I skipped)
1/2 tsp vanilla
1/2 tsp cinnamon
1 tbsp stevia, honey or sweetener of choice to taste (I used coconut nectar)
 
Method:
  1. Mix well all ingredients in a mason jar, or any glass jar
  2. Refrigerate overnight
  3. The next morning, serve cold as breakfast
 
Adding in roasted cashew and sweet cacao nibs is a great idea
 


Plus some fresh strawberries is even better!

No Cook Overnight Oats (2 Recipes)

Lately overnight oats is seen everywhere. Reading so many positive reviews, I want to try, too! And yes, I can't agree more. It's yummy and addictive
So glad to know that it's healthy, too!

These two recipes I'm going to share used Farmers Union greek yoghurt
I find it's a little too creamy for me - without affecting the yumminess factor, of course
I still have a few varieties I'd like to try, I will use Marigold low fat plain yoghurt and see the difference :)

The basic recipe I used is from Ellena from Cuisine Paradise

What you need:

6 tbsp organic rolled oats
1/2 cup greek or low fat plain yoghurt (I used greek yoghurt for these 2 recipes)
1/2 cup fresh milk (I used low fat high calcium)
1 tbsp chia seeds
===> Mix all ingredients above in a glass jar with airtight lid

With the basic recipe above, you may add on many varieties according to your preference :)
The two varieties I made here...


First - overnight oats with orange and berries

 
 
Here I added the basic recipes with cuts of orange segments (I used red flesh cara cara oranges), strawberries and blueberries. Stir into the oats mixture and close the lid. Keep refrigerated overnight. Drizzle about 1/2 tbsp of raw honey before serving
 

 
 
Second - overnight oats with peanut butter and cocoa
 


Into the oats mixture, I added 1 heaped tbsp of creamy peanut butter and 2 tsp of Valrhona cocoa powder. Stir and close the lid. Keep refrigerated overnight. Drizzle about 1/2 tbsp of raw honey and sprinkle some semi sweet chocolate chips before serving

 
 
I strongly urge you to give this a try. It's one yummy breakfast menu that can be eaten as all day snack too :)

Cinnamon Crunch Muesli (Bill Granger)

This homemade muesli is really easy to prepare and delicious!
Recipe is from HERE




What you need:
(below is half recipe)

63g unsalted butter
30g light brown sugar
1 tsp ground cinnamon
150g rolled oats
80g almond with skin, roughly chopped

Method:
  1. Preheat oven to 160degC. Line baking tray
  2. Heat in a pan over medium heat - butter, sugar and cinnamon
  3. Stir til butter melted and sugar dissolved
  4. Off heat, add in oats and almond, stir to coat evenly
  5. Spread the mixture evenly on the tray
  6. Bake about 30 minutes, stir occasionally til lightly browned
  7. Cool completely and store in an airtight container
Serving suggestions: with yoghurt and/or poached fruits

THB #26 Raisins Oatmeal Cupcakes

The 26th bake for The Home Bakers - hosted by Joyce from Kitchen Flavours, where we bake from the book Coffee Cakes by Lou Seibert Pappas





I did some adjustment for this cake, just to make it to something at least one of the family member can enjoy. That one family member is usually me LOL

I baked half recipe in cupcake pan - I got 7 cupcakes. Using buttermilk as one of the option besides low fat yoghurt, omitted dark molasses, replaced vanilla extract with dark rum, replaced whole-wheat flour with plain flour, replaced cranberries with golden raisins and lastly, omitted nuts (for this, by accident. I totally forgotten about it LOL)

I must say this cake is not bad. It's tasty, and can taste the crunch from the oatmeal, pretty fluffy and moist - thanks to the rum soaked golden raisins :)
Great to eat this cupcakes as breakfast with a cuppa :)
