Thai Iced Milk Tea



Recipe is from HERE

What you need:
(for 1glass)

3tbsp Thai tea leaves
1cup hot boiled water
1.5tbsp sweet condensed milk
2tsp sugar
a pinch of salt
ice cubes
cheese cloth to strain tea leaves

Method:
  1. Wrap tea leaves in a cheese cloth and put into a cup or bowl. I like to clip the tip to the edge of the cup to prevent it from sinking in. Pour water into the cup. Let steep for 3minutes (I tried to steep for 5minutes it was too strong to our liking)
  2. Remove tea leaves and add in sweet condensed milk, sugar and salt. Stir well
  3. Pour into a cup with ice cube. Ready to serve
Notes:
  • The original recipe adds evaporated milk before serving. We find it's not necessary. Again, up to one's preferred taste
  • I usually steep the tea leaves again for my second batch, this will be 5minutes. No waste! :)

Gula Melaka Milk Bubble Tea





Nice but time consuming. Will opt for ready to cook or eat in the future LOL

What you need:

For the pearl:
200g tapioca starch, sifted
80g + 100g shaved gula melaka
130ml water
extra tapioca starch

Method:

  1. In a pot, bring water to boil. Add in 80g gula melaka and stir until melted
  2. Add in tapioca starch and mix. The mixture will be watery. Keep stirring over very low fire until it's thickened up, about 5minutes or so
  3. Transfer to a lined surface and knead for a while until it's pliable
  4. Break into a few parts and roll into long logs and cut into small beads
  5. Roll each bead into a small ball and put on a plate with tapioca starch in it to avoid the balls from sticking to each other
  6. After finish with the rolling, bring a pot of water to a boil and simmer them for 15minutes over medium low fire
  7. Drain and put back into the pot, mix in 100g gula melaka and simmer over low fire until all gula melaka melted
  8. Keep in the fridge until it's ready for use





For the milk tea:
a cup of black tea (any tea of your choice, English breakfast, Earl grey, etc), you may omit if you prefer just fresh milk for your bubble tea drink
some ice cubes
fresh milk

Method:

  1. Add in a few spoonful of pearls into a tall glass. You may tilt the glass 45deg, twirl it so the gula melaka can stick to the sides of the glass (more for presentation)
  2. Add in ice cubes and pour tea followed by milk. The ratio depends on one's preference
  3. Ready to serve. Stir before you consume

Milo Dalgona




Recipe is from Tintin Rayner

What you need:

200ml whipping cream
110g Milo powder
20g icing sugar
ice cubes and fresh milk

Method:

  1. Put whipping cream, Milo and sugar in a mixing bowl
  2. Using a hand mixer, mix together until thick and creamy
  3. Put ice cubes in a glass and pour milk over
  4. Scoop some amount of Milo mixture and put gently over the milk. Serve

Dalgona Coffee

I know this blog is dying, if not dead haha.. but I decided to start again, cos to me this blog is the most convenient reference
It's my recipe library and will remain so, hence start adding the collection from now on
Not much of a story telling like how I used to do though, just one recipe at a time, and of course with the pictures :)




Dalgona coffee
A nice twist of drinking coffee :)

What you need:

2 tbsp instant coffee powder
2 tbsp brown sugar
2 tbsp hot water
200ml cold milk

Method:

  1. Mix in coffee powder, brown sugar and hot water in a rather tall container. Whisk until soft peak, using electric mixer or hand whisk (they say 400 times of whisking by hand, but of course I chose hand mixer LOL)
  2. Pour milk into a serving cup
  3. Scoop the coffee mixture and place gently over the milk. Serve immediately

Milo Dinosaur

My kids love Milo, in any form. Well, I think ALL kids love it
No exception to this drink. Yum yum, they said. And I must agree :)


 
 
 
What you need:
 
5 tbsp  Milo powder
120 ml hot water
120 ml milk
3/4 tbsp condensed milk
some ice cubes
more Milo powder for topping
 
Method:
  1. Into the hot water, pour in Milo powder and condensed milk, stir well
  2. Add the mixture into milk, stir and pour into a tall glass or mug
  3. Add in ice cubes and top with LOTS of Milo powder
  4. Serve immediately

Homemade Almond Dates Milk

I am not really milk drinker. Perhaps flavoured milk, but it's just once in blue moon I have the craving for one
When I decided to attempt on making almond milk, it's just a curiosity on my head
I did try store bought one in tetra pak, and I didn't really enjoy drinking it, mostly because of the strong smell of almond extract, which I hate
So, I was like, well, perhaps I could make better. So I tried. And it's something that I will not regret at all. In fact, I will be delighted to have this every single morning for breakfast! Yes, it's that delicious!
Oh, I'm a convert. Now I'm officially a milk drink. Homemade almond milk, that is :)




Recipe is from Oh She Glows

What you need:

1 cup raw almonds, soaked in water
3.5 cups filtered water
3 large pitted Medjool dates, chopped
3/4 tsp vanilla extract
small pinch of salt
1/4 tsp cinnamon (I skipped)

Method:
  1. Soak almonds in water for 8-12 hours (I soaked mine about 15hours)
  2. Soak dates for about 1 hour prior to making the milk. This step is optional, only when you feel the dates are too dry
  3. Rinse and drain almonds and place into a blender with filtered water, dates, and vanilla extract and blend on highest speed for about 1min
  4. Place a nut milk bag (I used cheese cloth but I reckoned nut milk bag is a better choice) over a large bowl and pour almond milk mixture into the bag. Gently squeeze the bottom of the bag to release the milk
  5. Pour milk into a glass jar, store in the fridge for up to 3-5 days. Shake jar very well before using as the mixture separates when sitting

This thick, creamy and delicious milk is so yummy on its own, to eat with cereal, to cook oatmeal or to make overnight oats. I was thinking to make some of the milk into chocolate flavoured, but perhaps next time. Meantime, I just enjoy this milk plain, something I almost never do! :)

AFF India - Mango Lassi

Ppppsssstttt!!! Let me share a secret, I am not a big fan of Indian food. Only to name a few that I don't mind having - prata, naan and dosai. That's it!

Perhaps I'll give my hands on naan in a day or two. But for now, this is what I have made for this month's Asian Food Fest - mango lassi
Believe it or not, this is my first time trying it out. Never had it before! Don't laugh! LOL

Easy and quick to prepare - checked. Delicious - checked
Sweet, creamy and refreshing, yum!
I can't believe this is one of the popular treat in India. To me, this is one healthy and delicious mango smoothie :)


 
 
What you need:
 
1 large mango (I used Thai honey mango)
1/2 cup plain yoghurt
1/4 cup fresh milk
1-2 tsp raw honey
 
Method:
  1. Mix all ingredients in a blender and blend til smooth
  2. Keep refrigerated before consuming

Fruits & Vegetables Smoothies (1)

I am into smoothies only for the past 3 weeks. Perhaps it's because I saw many are making too, and I'm basically one fruits and vegetables lover
One thing for sure, smoothies is delicious and it's definitely easier and faster to gobble up a pile of goodness - fruits, vegetables - those you like and/or not, also you can even add on your daily supplements in it

Basically, you use some base liquid - water, milk or even tea. Then you can just add in whatever fruits and/or vegetables you feel like having or what you have in your fridge
After that you can add in any preferred natural flavouring and/or sweetener - honey, cinnamon, vanilla extract, raw cacao, or even nut butter
Before consuming, you may top with fruit chunks or any kind of seeds or nuts
Believe it or not, I always feel so stuffed after my smoothies it can last the whole morning til lunch time :)




This is not my first smoothies, actually. But the first one I share here in this blog. I surely will have many more coming up :)

Here's what's inside my this orangey smoothies (I actually had this for my lunch!):

1 small banana
1/2 forelle pear, skin on - diced
orange segments from 1 orange
1/2 medium carrot - grated
1 tsp flaxseed meal
150ml water
50ml apple juice from SunMoon fruits cup
18g protein powder - Nutrishake from Oriflame (strawberry flavour)
1 tsp collagen powder from Unicity
1 tsp chlorophyll powder from Unicity
For topping:
peach cut from SunMoon fruits cup
sprinkle of chia seeds

Method:
  1. Blend everything til smooth
  2. Add topping and consume immediately

Thai Lemongrass Tea - Nam Tak Rai (AFF Thailand) & Korean Sweet Pancakes with Brown Sugar Syrup Filling - Hotteok (AB)

Two in one post today :)
The drink is from Thailand. The snack is from Korea. Two different countries. But they go really well together :)


Thai Lemongrass Tea (Nam Tak Rai)

 
 
Really simple to make. Taste so good. And great for body, too :)

What you need:
(with some modification)
 
3 litre water
3 lemongrass (discard the root) - pound lightly
thumb size of old ginger - peel and pound lightly
honey rock sugar (as desired)
 
Method:
  1. Bring all the ingredients to a boil (except rock sugar)
  2. Simmer for 15 minutes
  3. Add in rock sugar and simmer for another 5 minutes
  4. Discard lemongrass and ginger
  5. Serve hot
 
Now, the companion: Korean Sweet Pancakes
This popular street snack in Korea. Served hot and folded in a paper container, every bite will burst with melted brown sugar and cinnamon mixture. Chew it together with the chewy dough, it's just so yummy!

What you need:
 
1 cup lukewarm water
2 tbsp. sugar
2 tsp instant yeast
1 tbsp. oil
2 cups plain flour, plus 1/2 cup for kneading, filling and shaping
1/2 tsp salt
 
 
Filling:
(to mix well)
1/2 cup brown sugar
1 tsp cinnamon powder
2 tbsp chopped walnut (I didn't use)
 
Method:
  1. Mix lukewarm water, sugar, yeast and oil. Stir well
  2. In another bowl, mix plain flour and salt
  3. Add in the flour mixture into the yeast mixture, mix with rice scoop or hand (I used rice scoop)
  4. Let the dough sit for an hour (I let it sit for I 1/2 hour), then knead for awhile to let the gas bubble out
  5. Spread about 1/2 cup of plain flour on cutting board (this is a lot of flour, but it's necessary since the dough is real sticky)
  6. Knead dough for awhile, cut into 8 equal sized balls
  7. Flatten, put filling at the centre (about 1 heaped tbsp), seal to make a ball
  8. Place on a heated non stick pan with about 2 tbsp of oil (medium fire)
  9. Let cook for about 30 seconds til bottom turned light brown, turn over and press the dough with spatula til thin and wide (about the size of a CD). Let cook til golden brown at the bottom
  10. Turn over again and turn heat very low. Cover pan and cook another 1 minute (to let the sugar filling melts)
  11. Serve immediately
 
Note:
*This snack won't taste so nice after cooling down - in my opinion (DH didn't mind eating it cold LOL). The best is to serve it immediately
*This recipe makes 8 pancakes. I made 4 pancakes and I froze the other 4 dough balls (in separate plastic wrap). After thawing, it worked just as good as the first 4 pancakes I made :)
*Another great filling recommended is mozzarella cheese. I shall try it next time :)
 
 


 The green strange-looking dog at the back is clay modelling done by Ian, and he's so proud of it he wanted me to use it as prop :)
