So excited when I saw a simple dish using eggplant. And it's so easy to prepare, too

What you need:
3 medium size eggplant
2 1/2 tbsp light soya sauce
1 stalk of spring onion, chopped finely
2 cloves of garlic, minced
1/2 tbsp roasted sesame seeds
1/2 tbsp sesame oil
1 tsp of hot pepper flakes (I used 1/2 tsp in powder form - not as spicy)
Method:
- Cut 3 medium sized Asian eggplants into 3 pieces. Then cut each piece in half lengthwise
- Steam the pieces of eggplant inside. Bring to a boil for 15 minutes over high heat
- Turn the heat off and move the cooked eggplant to a bowl. Set it aside to cool down
- After the eggplant has cooled, drain the liquid. Tear each piece of eggplant lengthwise with your fingers, and put the strips into a large bowl
- Add in all seasonings and mix together using your hands
- Serve with rice

ReplyDeleteHi Alice..so happen i saw your post in AFF page and i was attracted by it..coz among various korean side dishes,i love eggplant the most!and i wanted to learn to make it on my own for quite some time..after reading your recipe,i guess i would be able to come out with my own well..haha..thanks for your recipe!
