It's really my kind of Christmas fruit cake, I just do not fancy the usual fruit cakes people usually bake and many bakeries sell during Christmas season
So, here it is, with a little modification
I used cake flour instead, and besides chopped dried apricots, I used dried mixed fruits too
Pretty isn't it? And it's yummy too :) Perfect treat for Christmas gathering :)

ReplyDeleteWhat a coincidence, I baked Ann's apricot slice just today and it turned out great. Now seeing that you used mixed dried fruit to make it more "Christmas-y", I want to try that too. Can you tell me how much cake flour did you use? 175g as Ann wrote, or you reduced the amount? Because I think 175g cake flour looks quite bigger in volume compared with 175g plain flour. Can you please kindly explain?
And may I know what kinds of dried fruit did you use? Did you use all sour kinds (apricots, cherries, cranberries...) or both sour and sweet kinds (like including raisins)?

i used 175g cake flour, the same amount as what Ann used with plain flour..yes I agree that it usually will be bigger but not this one, perhaps cos of the dried fruits, I actually added the quantity a little more to 120g - 50g dried mixed fruits and 70g dried apricot :)
the dried mixed fruits i used those sold in supermarket in boxes, the brand is silver bird if i'm not mistaken, sorry i was looking for the box but i threw it away already
