THB #2 Apricot Pistachio Lemon Coffee Cake

Second bake for The Home Bakers event, from the book Coffee Cakes by Lou Seibert Pappas
It's  quite simple to prepare, with ingredients I seldom use, apricot and pistachio
In fact, this is the first time I use pistachio in my baking, usually I would only munch this yummy nuts

While the first bake for this event was chosen by Joyce, this time is Chris from Yummy Bakes who chose this cake for this month's bake

Overall this is a nice cake, soft and moist, great as snack during tea time :)
I like it even better the next day!
Too bad I diced the pistachio too finely I couldn't really taste it
As I (still) haven't bought my own bundt pan yet, I used my mini baked donuts tray which I got quite sometime back but never used :)
And I think it's a good thing to use this tray, cos I didn't have to slice the cake :)
I made half the recipe and reduced the sugar slightly, just nice to my liking
Oh and I soaked the apricots with rhum :)

      yeah, it's easier to eat without cutting and easier to control too LOL
      you're right, so fun looking around the others' bakes, all so creative in their own way isn't it?

    me also want this mini doughnut pan ... shsssh ... don't type too loud (DH is sitting behind me and he will say 'you run out of storage space liao!!).

    So adorable and the right bite size .. or two ... or three!

    What a great idea to bake them in a doughnut pan. I made small cakes too, but i baked them in 2inch souffle dishes.
    The best part was that i didn't had to cut the cake;-)

    I don't have bundt pan too, and I think I will just get mini donut pan instead. I like the idea of making individual mini cakes, less mess in cutting. Yours look lovely!

      i often do that whenever possible, making big cake into smaller size
      it cut down the baking time too :P

  9. Hi Alice! The donut cakes are so, so, so cute!! I love individual cakes too, but was too lazy this time round to divide and bake them haha. Yours look really soft and delicious! I don't think I can stop at one donut cakes... ;)

  11. Aiyo, what a cute mini cake .. Less hassle , smart idea ... LOL .. I love this. Guess I should get a pan like yours , but then.. [ mom is actually gonna scream at me cos I am running out of storage space like Emily too] LOL....

  13. I love mini cakes. They look so cut. I am sure I will not stop at one or two. The combination of lemon and coffee sounded so good.

      actually this cake doesnt use coffee, only apricot, pistachio and lemon
      but i guess some coffee flavor added will only makes this cake taste better :P
