Chicken Corn Porridge

This is a twist for the usual Indonesian chicken porridge I always make or other porridge dishes I always love to eat and easily found in Singapore

 

 

 
One dish very much loved by the whole family :)
I used my pressure cooker for convenience
The recipe below used normal pot

 
What you need:

 
3 cloves of garlic, minced
250g chicken breast, small diced
2 cans of corn kernels (or corn kernels from 4 large corns)
1 can button mushroom, cut
2 cups of rice
16 cups of water
sesame oil, oyster sauce, salt, a little sugar
  1. Put in well rinsed rice and water in a large pot, bring to boil on low fire
  2. Heat frying pan with sesame oil, sautee garlic til fragrant, add in chicken and stir til chicken cooked and change color
  3. Pour chicken mixture into the pot, stir to combine with the rice
  4. Add in corn kernels, stir well, followed by mushrooms, stir well
  5. Add in oyster sauce, salt, sugar and more sesame oil  til the desired taste achieved while stirring continuously til the mixture becomes thick
  6. If you find it's too thick, you may add more water (the measurement here is the best for my liking)
Note:
Always stir to avoid the bottom part being burnt

 
My family, including me, love to eat this porridge with bottled chilli sauce and prawn crackers. Sounds weird, but it's really delicious :)

Century Egg Porridge

A simple hearty meal...
Saw this dish at My Kitchen and drooled instantly - realized it's been ages since the last time I had this dish
















Mind the over sprinkled spring onion - I'm a big fan of everything related to garlic and onion :P

What you need:
(modified to my preference)

1 chicken breast bone
1/2 cup rice - washed and rinsed - soak for 3hours
5 cups water
2 cooked century eggs - peeled and cut into 2 (to cook, boil the peeled raw eggs for around 20mins)
minced pork, chicken stock powder, salt to taste

For garnishes:
spring onion - cut
garlic oil
fried onion

Boil chicken bone with water, discard all the oils floating
Lower the heat, simmer for another 30mins
Take out chicken bone - set aside
Add in rice to the chicken stock, bring to boil, simmer til rice turns soft (I like the porridge thick instead of runny)
Add in minced pork and century eggs - cook for another 5mins
Trasnfer the porridge into serving bowl
Garnish with garlic oil, cut spring onion and fried onion as you wish
Eat hot (of course *grin*)

Indonesian Style Chicken Porridge

Abby was down with throat infection last week, high fever, slight cough and runny nose, haizzz...
Her appetite wasn't good at all, so I decided to cook something easy to swallow
What else if it's not porridge?
Being selfish and want to entertain my own craving for Indonesian food, I decided to cook this porridge :P



What you need:

For the porridge:
2 cups rice
1 chicken breast bone
a little salt, water

For the topping:
shredded steamed chicken breast (original recipe is fried, but it's a little too tough for my kids so i opt to steam instead - it's healthier too!)
chopped spring onion
dong chye (preserved salted vegetables) - washed and drained
fried onion
yu tiao - toast for 2mins and cut
small prawn / onion crackers
a dash of light soya sauce and sesame oil

For the chilli:
big red chillies, boil for a few minutes, chopped after boiled
salt, sugar

Cook the ingredients for porridge altogether til the consistency desired - keep stirring to avoid burning at the bottom of the pot
I do not make it so thick cos it'll thicken when cooled

Place porridge in a serving bowl
Put shredded chicken, dong chye, fried onion, spring onion, yu tiao, crackers
Additional light soya sauce and sesame oil is recommended for best flavour

For the chillies: mix all ingredients in the food processor and pulse

Note:
- Some people in Indonesia loves to add raw eggs at the bottom of the bowl before adding the porridge in 

For my kids, I only use the shredded chicken, yu tiao, crackers and spring onion - well I skipped the crackers for Abby cos of her throat condition, and she still loved this porridge :)
Ian really loved yutiao, he had his spoon on one hand and yu tiao on his other hand :P
