Chocolate & Strawberry Steamed Cake (Indonesian Bolu Kukus)

Very popular cake among Indonesians, I have been always curious in making this cake but always forgotten about it
I have 2 different recipes and since I happened to have extra strawberry milk in the fridge a few days ago, so I decided to give a try - the one using milk

Usually this cake uses special mould, something like muffin mould made of aluminium with holes around it and to layer parchment paper in it before pouring the batter
I have them but too lazy to do the paper so opted for muffin paper instead
Ended up I had these giant short fat cakes hehe....


Another thing was, I put them in the steamer too close to each other they can't bloom to the max - haizzz... I should have put them a little more separated and I could have prettier cakes :(


But really, there's no doubt, this cake tasted yummy, soft and fluffy - my kind of cake :)



Recipe adapted from NCC Indonesia
(I made half recipe and modified a little)

What you need:

225g sugar
250g plain flour
1/2 tsp double action baking powder
2 eggs
150ml strawberry milk (original recipe mentioned water / coconut milk as other options)
1/2 tbsp ovalette
1/2 tsp vanilla essence (original recipe used banana essence)
1 tbsp strawberry paste & 1 tbsp chocolate emulco

Sieve plain flour and baking powder together, set aside
Beat sugar, eggs and ovalette til thick and creamy
In low speed, gradually add in flour+baking powder mixture, alternate with milk - mix well
Add in vanilla essence, mix well
Divide batter into 2, one to add strawberry paste, and the other to add in chocolate emulco
Pour strawberry batter to the mould til half, top up with chocolate batter til almost full
Preheat steamer, put them in it and steam for 15 minutes (please arrange them with quite a distance approx 5cm from each other to allow them to bloom to the maximum)

I will try the other recipe next time, no milk used, but 7-up instead
My mum said the latter has softer texture and tastes a little better
And of course, the next time I make again, I will use the correct mould and do the correct steaming method *grin*

  4. Very nice colours combination and fluffy steamed cake! Suite my 2 boys as elder likes pink and the younger likes brown(chocolate). This time no one will complain with this dua colours cake..ha..ha..

  6. Hi, really like the combination of strawberry and chocolate! By the way, can I use cake flour instead? In addition, can I beat the eggs with sugar until fluffy first then I fold in the cake flour? Will it make the cake soft and fluffy too? Thank you very much!

      yes u may use cake flour but either reduce or omit the baking powder used
      beating eggs and sugar til fluffy is definitely fine
